Protein Kodiak Waffles

This stuff is A-MAZ-ING! It's made with 100% whole wheat and oats and it uses honey instead of sugar. And there isn't a never ending list of ingredients I've never heard of before.

The mix already had some protein in it, 7 grams per serving, but I knew I could squeeze in more protein. So I did:

These waffles were amazing. They were light and fluffy with a delicious crunchy "skin". Their flavor was delicious without the syrup and dipped in a little sugar-free caramel syrup, they tasted like dessert. The extremely picky husband had no idea they were good for him and glared at me when I told him he was eating something healthy. He has a reputation of eating unhealthy to maintain, don't you know? 4ft devoured his as well. I think they're my new favorite waffle as well, especially on the mornings when we're busy and I don't have time for "from scratch" protein waffles.

Protein Kodiak Waffles

Ingredients
1 scoop protein powder + waffle mix to equal one cup
1/2 cup Silk soy milk
1/2 cup cold water

Directions
1.) Pour one scoop of protein powder into a measuring cup and then add the waffle mix until it equals one cup.
2.) Pour into a medium-sized mixing bowl and using a wire whisk, mix the dry ingredients together
3.) Add soy milk and cold water to the mix and stir until well blended using a wire whisk.
4.) Pour batter into your waffle iron. I cooked mine at the medium setting and they came out perfectly. Light and fluffy with a crunch outside.

  2. Yumm! I bet chocolate protein powder would be fabulous. I also throw mini chocolate chips onto waffles just off the iron for 4ft (the others are too picky for that which is chocolate -- I really don't know how they could be mine. Who doesn't like chocolate? Sheesh). Definitely keep me posted on how they went over.
