Bourbon Street Chicken


Did I mention we eat a lot of chicken (cluck cluck)? I have lots and lots of chicken recipes. And really, you don't mind eating chicken so much if you have a wide variety of flavors, you know?

Bourbon Street Chicken recipes have a lot of sugar and and are made with apple juice. I thought why not use unsweetened applesauce instead of apple juice and get a little more nutritional value out of it. The flavor is absolutely delicious and the whole family (except for Grumpers -- but he never eats anything) loved it. The sauce is thick and really sticks to the chicken and it went really well with the nutty flavor and texture of rosemary quinoa.
 

Bourbon Street Chicken

Ingredients
2 large boneless skinless chicken breasts (cut into bite-sized pieces)
1 TBS cornstarch
1/2 tsp salt
1/4 tsp ground ginger
1/2 tsp red pepper flakes (divided)
1/2 tsp garlic powder
1 TBS olive oil
1 TBS minced garlic
1/2 cup unsweetened applesauce
1/4 cup golden brown sugar
2 TBS ketchup
1 TBS apple cider vinegar
2 TBS soy sauce
1/4 cup water

Directions
1.) Mix cornstarch, salt, ginger, garlic powder, and 1/4 tsp red pepper flakes in a small bowl and then sprinkle over the chicken pieces in a gallon Ziplock bag. Then shake, shake, shake senora, shake your body line. (Another ear worm. Yay!) Set aside.
2.) Combine applesauce through water and 1/4 tsp red pepper flakes in a medium bowl and whisk together until well incorporated. Set aside.
3.) Heat olive oil in a large skillet over medium-high heat. When hot, add garlic and saute for 30 seconds. 
4.) Add chicken and cook until browned 5 to 10 minutes.
5.) Pour in the applesauce mix and bring to a boil then reduce heat and simmer until sauce is thickened for 5 to 10 minutes.
6.) Serve hot with quinoa, cous cous, or brown rice and a vegetable.
