No-Muss No-Fuss Chili Beans
When the weather turns cold and rainy there is nothing I like better than a hot bowl of chili. I especially like it because it's a one pot easy peasy meal with little to no effort and quick clean up. And look, it's not made with chicken! (cluck, cluck) This is mild enough in heat for kids (mine inhale it -- well, not Grumpers but then he doesn't eat anything) and easy on a stomach after weight loss surgery as well. And it's a good thing we all love it so much because it makes a LOT of chili and we eat on it for days and DAYS. It also freezes really well too but it never lasts long enough in my house to bother with it.
No-Muss No-Fuss Chili Beans
Ingredients
1 lb lean ground beef (93/7)
1 TBS taco seasoning
1 TBS garlic powder
24 oz jar of Pace Chunky Salsa - Mild (or your favorite salsa)
14.5 oz can of beef broth
15 oz can of kidney beans (drained, not rinsed)
15 oz can of black beans (drained, not rinsed)
2 TBS Worcestershire Sauce
1 TBS minced garlic
1 tsp coriander
1 tsp cumin
1 tsp chili powder
Directions
1.) In a large pot brown the ground beef with the taco seasoning and garlic powder.
2.) Add the rest of the ingredients and bring to a boil.
3.) Turn heat down and simmer for 30 minutes.
4.) Serve hot with corn bread or crackers.

Haven't commented, but I've been enjoying your recipes. And now that I've got a diabetic mouth to feed (Captain), it helps that you put the carbs and sugars. Thinking about you chickie and glad you're healthy. But don't tell anybody I said something nice.
ReplyDelete*gasp* O.o Who are you and what did you do with the Doodlesnot??? Good luck with the Captain! Diabetes is a pain in the butt, my sister has the diabetes and I know it makes her crazy.
