Jalapeno Popper Cauliflower Casserole


Jalapeno Popper Cauliflower Casserole is one of my favorite go to side dishes and you have got to try it! It's like mashed potatoes on steroids except like way better for you because it's made from cauliflower and not potatoes. It's a great side dish with grilled chicken or meat, or a main course with a salad, or as leftovers -- it's delicious rolled up in sliced turkey lunch meat. 

4ft loves it and asks for it all the time. Even the husband who hates all things cauliflower says it's not bad and will eat it if it's there. The Littles thumb their noses up at it but they don't like mashed potatoes at all either and that's what they think it is.



Jalapeno Popper Cauliflower Casserole

Ingredients
1 cup small cauliflower florets
2 TBS cream
1 TBS butter
1/2 cup 2% cheddar-jack shredded cheese - divided
1 TBS chopped jarred jalapeno
1/2 cup cream cheese
2 TBS salsa verde
2 TBS 2% mozzarella shredded cheese

Directions
1.) Preheat oven to 375 degrees Fahrenheit
2.) Microwave cauliflower, cream, and butter, covered, for 10 minutes stirring half way through.
3.) Add cauliflower mixture to blender or food processor with 1/4 cup cheddar jack cheese and chopped jalapeno. Process until creamy and fully mixed. Set aside.
4.) Microwave cream cheese for 30 seconds until soft and creamy.
5.) Mix the salsa verde with the cream cheese. Set aside.
6.) Divide cauliflower mixture between 4 ramekins. Spread level.
7.) Divide cream cheese mixture between 4 ramekins. Spread level.
8.) Divide the remaining cheese equally over each ramekin.
9.) Bake for 20 minutes or until cheese is melty golden delicious looking and the casserole is piping hot.
10.) Enjoy!
