Week of 11/29 through 12/05 Recap

Guess what?

I've lost 64.8 lbs. Do you know what that means? It means that if I lose another .2 lbs by Christmas I'll have achieved my mini goal of losing another 15 lbs by Christmas. Can I get a Hallelujah? Oh yeah! HALLELUJAH!

Not that I'm excited or anything. Really.

A quick week recap: I jogged everyday for at least 30 minutes nonstop. I'm building up my endurance for when I get off my butt and find a 5K to run. I decorated a graveyard of melting snowmen for a fundraiser/contest at 3ft's school without eating a single cupcake. I sneaked vegetables into my boys by grating zucchini and carrots into my spaghetti meat sauce and they devoured it. I got a yen for s'mores so I created a new brownie recipe I call, "Gimme S'more Brownies". (and in case you missed the picture)


Gimme S'more Brownies

Ingredients
*Graham Cracker Crust

5 graham cracker sheets (crushed)
2 TBS sugar
1 TBS butter (I use Brummel and Brown Spread w/ Yogurt)

*Double Chocolate Brownie

1/4 cup unsweetened cocoa powder
1/2 cup granulated sugar
2 TBS butter (Brummel and Brown Spread w/Yogurt)
1 egg
1 TBS water
1/2 TSP vanilla extract
1/2 TSP instant coffee granules
1/4 TSP baking powder
1/4 TSP kosher salt
1/3 cup all purpose flour
2 TBS semi-sweet chocolate chips

1 1/3 cup mini-marshmallows

Directions:

Preheat oven to 350 degrees

Combine graham cracker crumbs, 1 tbs melted butter, and 2 tbs sugar together in a medium size bowl and mix together thoroughly.

Line an 8x8 glass baking dish with parchment paper and then spray bottom only with cooking spray (leave enough parchment paper on 2 opposite sides to use as handles to lift the brownie out)

Press graham cracker crumbles into bottom of prepared baking dish and bake in the oven for 10 minutes.

Combine first 9 ingredients (cocoa powder through kosher salt) of Double Chocolate Brownie in a large bowl and whisk together until smooth. Add flour; mix. Fold in chocolate chips.

Pour on top of graham cracker crust and spread evenly. Bake for 12 minutes.

Top with mini marshmallows and bake another 5 minutes until marshmallows are browned and melted.

Let cool in glass dish on wire rack for at least 30 minutes, lift out by parchment paper, and cut into 16 equal squares. (cutting tip, use a warm, wet knife to reduce stickage)

Woohooooooooooo! You passed 60 and didn't tell us! Congrats!! That's awesome you've built up your endurance that much. I'm not sure if I can run 30 minutes non-stop.

Hooey, I hadn't weighed myself since right after Thanksgiving. I didn't know I'd passed 60 either until I got on the scale Sunday. LOL

Turkey, they are soooooo delicious.

Nunan, I've been getting bored with myself. How many interesting ways can you say, "I worked out and ate this?" LOL
