Sweet Beer Marinated Steak
99 bottles of beer on the wall, 99 bottles of beer... Okay, so it's actually only one bottle, but that boy sure does stretch when you only use a 1/2 cup at a time. So here is day two of using it up so it's not wasted.
This marinade is great for when you don't have access to a barbecue or don't want to brave the elements. It infuses the meat with a deep smokey flavor that when you sear and bake the steak, it makes it taste like you just pulled it off the grill. The nutritional numbers are a little higher for this recipe -- keep in mind the marinade is discarded for this recipe and I'm not exactly sure how much sticks to the meat so I put the full numbers up and then told you how much was marinade. Hopefully it's not too confusing.
Sweet Beer Marinated Steak
Ingredients
1/2 cup beer (I used Franziskaner Weissbier - Naturtrüb Ale)
1/4 cup golden brown sugar
1 tsp coconut oil
1 TBS minced garlic
1 TBS Balsamic vinegar
1 TBS Worcestershire sauce
1 TBS soy sauce
1/4 tsp liquid smoke -- mesquite flavor
1.5 lbs of your favorite cut of steak (I usually buy what's on sale -- I'm cheap)
1/2 tsp garlic powder
1/2 tsp salt
1/8 tsp pepper
Directions
1.) In a medium bowl, combine beer and all the ingredients through to the liquid smoke and mix well. Put steak into a Ziplock gallon bag and pour the mixed marinade on top. Seal and shake the bag and put in the fridge for at least 5 hours -- shake and rotate the bag at least once.
2.) Remove from fridge at least an hour before cooking -- room temp steaks cook faster and don't dry out as much.
3.) Preheat oven to 400 degrees Fahrenheit.
4.) Heat oven-safe skillet (pretty much any skillet can go in an oven if you wrap the handle in foil) over medium high heat.
5.) Remove steaks from the marinade and discard marinade. Salt, garlic, and pepper both sides of the steaks.
6.) Sear the steaks in the pan about 2-3 minutes on each side.
7.) Pop skillet in the oven and bake for about 9 - 12 minutes for medium rare (which is my favorite) or longer if you like it more done.
8.) Remove from oven, cover with foil, and let rest 5 minutes. Slice and then serve.
