Barbecue Chicken Pizza


Since having my surgery, I can't eat bread anymore -- for whatever reason this is a common occurrence in bariatric patients. I'm told eventually that will change and I'll be able to eat bread without it killing my stomach but who knows when that will happen. And to make matters worse, toast is supposed to be okay but I can't eat that either. So, I've had to get creative when it comes to lunch when I don't have leftover dinners (which is what I normally do for lunch). This is my favorite go to lunch right now add a vegetable or small salad and you're set!



Barbecue Chicken Pizza

Ingredients
1 extra thin corn tortilla
1 TBS barbecue sauce
2 TBS 2% Milk Mexican Shredded Cheese Mix
2oz grilled chicken breast (cut into bite-sized pieces)
2 TBS of roasted mixed bell peppers (red, orange, and yellow -- cut into bite sized pieces)


Directions
1.) heat tortilla on medium heat in a dry nonstick pan. Flip often until hot and crisp. I make it chip-crunchy.
2.) spread on barbecue sauce, sprinkle on cheese, chicken, and peppers and microwave for 30 seconds to melt the cheese.
3.) Pick it up and eat it. Super yummy.

Question for you?? How many Calories, Fat, Carbs, Sugar, and Protein are you supposed to eat in a day? I have been reading a lot of recipes to try after my surgery and I am not certain on how much of each I can have in a day. I have posted a few of your recipes on my blog fatness-for-fitness.weebly.com and of course i posted your website at the bottom. I also have you on my blog roll. I plan to try a lot if not all of your recipes :)

So the calories and protein vary depending on which stage you're on after surgery but ultimately you're trying to get back up to 60 - 70 grams of protein and about 1200 calories. As to the Fats, Carbs, and Sugars -- I don't really track any of that the most important thing to track is protein and to make sure you're getting enough because that's what your body needs the most of. I'm 7 months out, and I can get the protein in no problem but the calories are a struggle sometimes.

Just saw my doctor today he told me that he wanted me to eat 600-700 calories a day. I am having no problems getting to that level. I don't know if he wants me to up the calories the more I work out or what, but I just found out that I have lost a total of 36lbs and 13% of my excess body weight. I also dropped 6 levels on the BMI scale :) I love all your recipes, and I will probably post more as I try them those were what I posted that I haven't tried yet. They look delicious and cannot wait to try them! I wish I could come up with recipes like that, but I would prob combine some spices, and make it taste worse haha! Thanks for the encouragement!
